Distributor listing only. The K thermostat is the 5/16 in bulb unit with the long 96 in capillary, which is the number to match before substituting an RX or KX.

Controls fryer oil temperature where a long (96 in) capillary run is required — this is the longest capillary variant in this family, useful when the control panel is distant from the fry tank.
A vapour-charged sensing bulb and capillary drive a diaphragm; the dial biases a set of contacts against it. There is no electronics inside. When a unit like this fails it fails in one of four ways: the contacts weld closed (heat keeps rising), the contacts open and stay open (no heat at all), the charge is lost through a cracked bulb or a kinked capillary (the unit behaves as if the oil is always cold), or the calibration drifts so the dial no longer matches the oil temperature. Only the last one still 'works' — which is why it is the one that quietly overcooks oil or trips the hi-limit.
| Symptom | This part? | Check first |
|---|---|---|
| Oil keeps climbing past the dial setting until the hi-limit trips | Yes — contacts welded closed | Hi-limit continuity first; whether the burner stays lit with the dial turned to OFF |
| No heat, pilot or ignition sequence fine, dial turned up | Possible — contacts open, or charge lost | Gas-valve operator signal, hi-limit continuity, ignition sequence |
| Dial setting and oil temperature disagree by more than a few degrees | Possible — drift, or a fouled / mis-seated bulb | Bulb coating and immersion depth; cross-check the oil with a separate thermometer |
| Dial turns with no resistance, or no click at either end of the range | Possible — stripped shaft or detached capillary | Capillary routing at the stuffing box (kinks, crushed sections) |

Capillary, millivolt and high-limit thermostats in these part families are produced in volume in China. Public supplier directories list manufacturers concentrated in specific industrial clusters: Zhongshan (Guangdong) for capillary, millivolt and deep-fryer thermostats; Wenzhou (Zhejiang) for capillary, gas, immersion and mechanical thermostats with OEM/ODM capability; and Jinan (Shandong) for gas-valve and thermostatic gas-control components. When sourcing these parts from China, verify: dimensional drawings, sensing-bulb and capillary specifications, temperature accuracy, electrical ratings, cycle-life testing and applicable safety certifications (CE / CQC / UL). A high-limit safety thermostat must not be substituted on the basis of physical fit alone.
