What to Verify Before Ordering

These are the points that most often cause a wrong order on this specific part number. They are not generic advice.

Compiled from manufacturer catalog strings and distributor listings. Verify against your own equipment's parts manual before ordering. This is not an offer or a quotation.

How the sources word it

The number is a Fenwal melt thermostat sold under a Hobart part number. Two independent distributors publish the same physical specification; neither is the manufacturer’s own catalogue.

What it fits and where it is used

Fryer temperature control with a wide 75–550 °F range, including melting/solid-shortening applications. The dial lock plate and flexible shaft options in the OEM parts listing are specific to MJ41E and MJ45E fryers.

What it does and how it fails

A vapour-charged sensing bulb and capillary drive a diaphragm; the dial biases a set of contacts against it. There is no electronics inside. When a unit like this fails it fails in one of four ways: the contacts weld closed (heat keeps rising), the contacts open and stay open (no heat at all), the charge is lost through a cracked bulb or a kinked capillary (the unit behaves as if the oil is always cold), or the calibration drifts so the dial no longer matches the oil temperature. Only the last one still 'works' — which is why it is the one that quietly overcooks oil or trips the hi-limit.

Symptom check — is this control thermostat the cause?

SymptomThis part?Check first
Oil keeps climbing past the dial setting until the hi-limit tripsYes — contacts welded closedHi-limit continuity first; whether the burner stays lit with the dial turned to OFF
No heat, pilot or ignition sequence fine, dial turned upPossible — contacts open, or charge lostGas-valve operator signal, hi-limit continuity, ignition sequence
Dial setting and oil temperature disagree by more than a few degreesPossible — drift, or a fouled / mis-seated bulbBulb coating and immersion depth; cross-check the oil with a separate thermometer
Dial turns with no resistance, or no click at either end of the rangePossible — stripped shaft or detached capillaryCapillary routing at the stuffing box (kinks, crushed sections)

How to test it before you replace it

  1. Isolate gas and power, and cool the oil below 100 °F so the bulb is at room temperature.
  2. Disconnect the two wires at the thermostat and measure continuity across its terminals: at room temperature a healthy unit reads closed.
  3. Warm the bulb only — hot water or a heat gun on the bulb, never on the capillary — and watch for the contacts to open at the top of the 75–550 °F range.
  4. Cool the bulb and confirm the contacts close again. A unit that opens but never recloses leaves the fryer dead after one good cycle, and is often mistaken for a gas fault.
  5. Run a hand along the full capillary looking for kinks, flattened sections or a bulb that rattles. A damaged capillary cannot be repaired or recharged.
  6. and mounting.
These are standard electrical and gas-side checks for the device family, not a service manual for your fryer. Work with the appliance isolated, and have gas-side work done by a qualified fitter. Where this page states a value, it is copied from the specification table above; where it does not, the reading is only meaningful against your appliance manual.

Frequently Asked Questions

What does 00-348361-00001 fit?

The OEM parts listing references MJ41E and MJ45E fryers (Frymaster/Vulcan MJ series); some catalogs also list it for selected Garland models.

What is the temperature range?

75–550 °F — wider than the standard 200–400 °F fryer thermostats.

How is it mounted?

1/2 in NPT mounting with a 4-3/4 in probe, connected by wire leads.

China Sourcing Notes

Capillary, millivolt and high-limit thermostats in these part families are produced in volume in China. Public supplier directories list manufacturers concentrated in specific industrial clusters: Zhongshan (Guangdong) for capillary, millivolt and deep-fryer thermostats; Wenzhou (Zhejiang) for capillary, gas, immersion and mechanical thermostats with OEM/ODM capability; and Jinan (Shandong) for gas-valve and thermostatic gas-control components. When sourcing these parts from China, verify: dimensional drawings, sensing-bulb and capillary specifications, temperature accuracy, electrical ratings, cycle-life testing and applicable safety certifications (CE / CQC / UL). A high-limit safety thermostat must not be substituted on the basis of physical fit alone.
