What to Verify Before Ordering

These are the points that most often cause a wrong order on this specific part number. They are not generic advice.

Compiled from manufacturer catalog strings and distributor listings. Verify against your own equipment's parts manual before ordering. This is not an offer or a quotation.

How the sources word it

No OEM parts catalogue for the HK3 / HK31 series was found in public sources, and Hobart's own parts webstore returns no listing for this number. The nearest thing to authoritative wording is the aftermarket master catalogue, which calls it “a direct replacement for several models, including GE/Hobart XNC12X204/351306-7”. As listed by PartsFE: “Hobart 00-340307-00003 Fryer Heating Element 5500W 240V”; as listed by KitchenRestock: “Hobart 00-340307-00003 Fryer Element 240v 5500w”. None of this is OEM text, and it is labelled accordingly.

What it does and how it fails

An element is a resistive coil in a metal sheath: at its rated voltage it draws the rated current and converts it to heat. It fails open (no heat), shorts to the sheath (breaker trips, or the fryer becomes live), or degrades locally (slow recovery, hot spots, scorched oil). A wrong-voltage element does not fail at all — it just makes the wrong amount of heat, which is harder to notice: a 240 V element run at 208 V delivers about 75% of its rated wattage.

Symptom check — is this heating element the cause?

SymptomThis part?Check first
No heat at all, contactor pulls inYes — coil openContinuity across the element terminals, then the contactor and hi-limit
Breaker or RCD trips when the element is switched onYes — short to sheathInsulation resistance from terminal to earth; stop using the fryer
Slow recovery, oil will not hold temperaturePossible — partial failure or wrong voltageElement resistance vs the table above; supply voltage at the element
One area of the oil scorches, rest is coolPossible — local hot spotElement sagging or touching the vat; scale on the sheath

How to test it before you replace it

Cold resistance and current follow from the numbers on this page — R = V² ÷ W, I = W ÷ V. Use them as the comparison for a meter reading, not as a tolerance: resistance rises as the element heats.

SupplyRated powerExpected cold resistanceExpected current
240 V5500 W10.5 Ω22.9 A
  1. Isolate power at the breaker; elements are usually 208–480 V and remain a shock hazard after the contactor opens on one leg only.
  2. Disconnect the leads and measure resistance across the element terminals. Compare with the table above: an open circuit is a dead element, a very low reading is a shorted turn.
  3. Measure from each terminal to the sheath and to earth. Any reading other than open is a ground fault — replace the element before energising the fryer again.
  4. Confirm the supply voltage at the element matches the element's rating. A 208 V supply on a 240 V element under-heats; a 480 V supply on a 240 V element destroys it.
  5. Inspect the sheath for bulges, cracks and scale, and check that the element does not touch the vat bottom — contact there creates a hot spot and a short.
  6. Match the replacement on voltage, wattage, flange or thread and terminal arrangement; a physically identical element with a different wattage changes recovery time and current draw.
These are standard electrical and gas-side checks for the device family, not a service manual for your fryer. Work with the appliance isolated, and have gas-side work done by a qualified fitter. Where this page states a value, it is copied from the specification table above; where it does not, the reading is only meaningful against your appliance manual.

Frequently Asked Questions

What is the voltage and wattage of this element?

240 V, 5500 W, single phase (240V/60/1 on the aftermarket equivalent).

Is 351306-00007 the same as 00-340307-00003?

Distributor cross-reference tables report Vulcan 351306-00007 and Hobart 00-340307-00003 (with 340307-2 / 340307-3) as the same 240 V 5500 W element under different prefixes. These are reported cross-references from distributor tables.

Which fryer models does it fit?

Hobart HK3 and HK31 series fryers (HK03B, HK3, HK3B, HK3C, HK3D, HK31, HK31B, HK31C, HK31D).

Is there an aftermarket version?

Yes — distributor equivalents such as AllPoints 34-1046, Mavrik 341046, Certified 11042 and BakeDeco 47180 are listed for the same specification.

China Sourcing Notes

Capillary, millivolt and high-limit thermostats in these part families are produced in volume in China. Public supplier directories list manufacturers concentrated in specific industrial clusters: Zhongshan (Guangdong) for capillary, millivolt and deep-fryer thermostats; Wenzhou (Zhejiang) for capillary, gas, immersion and mechanical thermostats with OEM/ODM capability; and Jinan (Shandong) for gas-valve and thermostatic gas-control components. When sourcing these parts from China, verify: dimensional drawings, sensing-bulb and capillary specifications, temperature accuracy, electrical ratings, cycle-life testing and applicable safety certifications (CE / CQC / UL). A high-limit safety thermostat must not be substituted on the basis of physical fit alone.
